How is Japanese iced coffee brewed?

  1. Firstly, we ground coffee beans to make a powder. We made sure the coffee was grounded coarsely and cohesively.
  2. Sifted the ground powder into a container to reduce excess floaters. That was not ground. We wanted all the grounds in one place for easy control of distribution. Once it was put inside the filter.
  3. The number of grounds we can put depends on the size of the filter and the size of the cup. Aeropress was used for this experiment, so we only filled half with grounds using a scoop to measure out the volume.
  4. After about five minutes, we measured how much water to use from a jug. 20ml was poured over the coffee powder slowly. Because it would become too diluted if you poured quickly.
  5. We strained the water through to filter out any remaining floaters. The reason for using a small jug is so that it won’t overflow when you pour water over it.
  6. After about ten minutes, the coffee was 60% of saturation. But we put in another 20ml and waited half an hour until everything soaked up (100%). We found that it’s better to give it a lot of time for saturation so that the coffee wouldn’t taste weak.
  7. After waiting, we wetted the filter and placed on top of the Aeropress. Then we poured in the rest of the water. The total volume was about 280ml, which is twice as much as usual (140ml).
